Not as scary as it seems. The little hats are a good one to start on, as you don't have to worry about trailing strands a long distance at the back (unless you completely miscount, as I did), and it doesn't matter what the back looks like.

I went for the drop the yarn I'm using and pick up the other one method, which wouldn't be the most efficient, but is not complicated. You're supposed to put one over and the other under, which I wasn't consistent with, especially the first time, but it didn't fall apart.

If knitting in the round, don't do a pattern just at the front - have one that goes the whole way around. My first time was on one of those charity teddies, and I fear I've left the long bits too short (I didn't twist every few stitches, as you're supposed to with long stands), so the teddy's sides may be pulled in when stuffed.
